Trimbach's Kirsch is dry with medium acidity and medium-high intensity. It finishes long and fruity. Classically, Eau de Vies are doubled distilled in copper pot stills from the entire fermented fruit, pit included. In the case of Kirsch (or Kirschwasser), the sour Morello cherry is preferred. The brandy is either aged in glass or bottled un-aged, so as not to impart a color or disrupt its purity of essence. Cherry brandy from one of the finest producers!
