Santorini, the Greek island in the Cyclades, produces some of the most distinctive white wines around. This Santo winery example is made entirely of the indigenous assyrtiko grape, one that over many centuries has superbly adapted to its unusual island home of volcanic rock. The vines are trained to grow like the woven strands of a circular basket, as protection against the strong winds off the Aegean Sea and the powerful summer sun. The result is a wine of vivacious minerality, with aromas of white flowers and citrus fruits, and a long, full-flavored finish. Perfect on its own or with any Mediterranean seafood dish.
